I met Erica at Hy-Vee to see items that are lactose free. First, we met in the cafe so she could look over my 5-day food log/symptoms and ask me questions about my situation. Just keeping track of the food and symptoms was helpful to me. I was able to keep in contact with her through email before we actually met. Erica was easy to talk with. She genuinely wanted to help me through this rough patch. She gave me an information sheet with the Lactose Content of Common Food and Drinks. This information was also very helpful. The good news for me is that cheese has just .1 gram of lactose! Later that same day she emailed me with a list of other things that can cause GI distress. I won’t hesitate to meet with her again if I continue to have problems.
Erica has been an amazing coach for me since day one. She made better nutrition easy, understandable and possible for me. She is tremendously encouraging in all aspects. I was buried deep in an unhealthy diet mentality. I had tried them all, many successful, until they were over. Then all of the weight came back, and more. Erica showed me how to eliminate the idea of eliminating entire food groups! Eat everything and lose weight? Yup, it’s possible. After struggling with stomach issues and "icky" bowel movements for over a year, enough was enough! The thought of changing my diet and cutting foods out was very scary, but I knew I had to try something. Erica, made the process easy and simple. IBS-D has dominated my life for most of my adult years. When my symptoms intensified this past year, I was diagnosed with Fructose Intolerance, and my GI doctor referred me to Erica. It was a new learning curve for sure, and well worth following the planned diet – What? No garlic or onion – the staple of all foods! Erica very calmly showed me an alternative way to cook, and still get the flavors I was missing. So often it was just easier not to eat due to discomfort (or rushing to the restroom) as soon as I ate something. Erica helped me identify my trigger foods, and I soon began to feel better. This diet does work! What a relief to feel so much better with more energy, no more cramping and not worrying what the day will bring every day! 2020 I was told you have fatty liver disease. Scared me because I lost my mom to a liver disease 10 years ago. I was told lose weight and exercise that will help keep your liver from getting worse. I decided I needed help with this. So I got in touch with Erica. Best thing I ever did! She helped me make better choices with food and keep track of what I ate. And I got out there and walked. Started in May walking and watching and keeping track of my food I ate. I'm proud to say as of today I'm down about 20 pounds. Many inches. Went from size 12 jean to a 8. Just had a physical and my blood work was the best it has been in years. A year ago at my physical I was 187 pounds a couple weeks ago I weighed in on there scale at 170. Erica is also helping me with a exercise plan now. I'm so lucky I called her! I feel so much better inside and out!
