I wish there was a way to do more than 5 stars. Erica really helped me out and supported me through my journey with the low FODMAP diet. It’s a very tricky process’s but Erica made it simple. She was always available via email or text when I had questions. In my first meeting she supplied me with many helpful lists and recipes. In my second meeting she provided a simple diagram on how to introduce different foods for the diet. I can not thank her enough for her support and helping me with my gut health. I’ve noticed drastic changes and I’m beyond thankful! I would recommend her to anyone!

After being diagnosed with lactose and fructose intolerance issues I worked with Katie at Aim Nutrition Consulting to learn how to select foods my body could tolerate. She is amazing! Her expertise and knowledge along with her kindness and compassion really helped me through a difficult time. Navigating the low FODMAP diet can be challenging and Katie was with me every step of the way, answering my many questions and providing guidance and helpful resources. I met Erica at Hy-Vee to see items that are lactose free. First, we met in the cafe so she could look over my 5-day food log/symptoms and ask me questions about my situation. Just keeping track of the food and symptoms was helpful to me. I was able to keep in contact with her through email before we actually met. Erica was easy to talk with. She genuinely wanted to help me through this rough patch. She gave me an information sheet with the Lactose Content of Common Food and Drinks. This information was also very helpful. The good news for me is that cheese has just .1 gram of lactose! Later that same day she emailed me with a list of other things that can cause GI distress. I won’t hesitate to meet with her again if I continue to have problems.

Erica has been an amazing coach for me since day one. She made better nutrition easy, understandable and possible for me. She is tremendously encouraging in all aspects. I was buried deep in an unhealthy diet mentality. I had tried them all, many successful, until they were over. Then all of the weight came back, and more. Erica showed me how to eliminate the idea of eliminating entire food groups! Eat everything and lose weight? Yup, it’s possible. She has shown me how to incorporate fitness into my busy life, setting small, attainable goals and working up from there. She has challenged me and celebrated with me!
